Ingredients

  • 2 medium zucchini 
  • 1/4 cup unsweetened almond milk
Breading
  • 1/2  cup almond flour
  • 1 tablespoon ground flaxseed
  • 1 teaspoon nutritional yeast flakes 
  • 1/2 teaspoon ground paprika 
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon sea salt
 
 
Instructions
  1. Preheat oven 215 degrees. Lightly oil parchment paper lined baking sheet.
  2. Cut ends off zucchini and cut into strips about 1/4 inch wide and 3 inches long
  3. In a large bowl combine, almond flour, flaxseed, nutritional yeast flakes, paprika, onion powder, garlic powder cayenne pepper, and salt.
  4. Dip zucchini strip into non-dairy milk then into breading and place onto baking sheet.
  5. Bake for 25 minutes turning halfway or until lightly brown and crispy.
