- 2 medium zucchini
- 1/4 cup unsweetened almond milk
- 1/2 cup almond flour
- 1 tablespoon ground flaxseed
- 1 teaspoon nutritional yeast flakes
- 1/2 teaspoon ground paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon sea salt
- Preheat oven 215 degrees. Lightly oil parchment paper lined baking sheet.
- Cut ends off zucchini and cut into strips about 1/4 inch wide and 3 inches long
- In a large bowl combine, almond flour, flaxseed, nutritional yeast flakes, paprika, onion powder, garlic powder cayenne pepper, and salt.
- Dip zucchini strip into non-dairy milk then into breading and place onto baking sheet.
- Bake for 25 minutes turning halfway or until lightly brown and crispy.
