These peanut butter stuffed dates are the perfect little healthy treats on the go!

 

Ingredients

15 Medjool dates
15 teaspoons peanut butter
3.5 ounces (100 grams) dark chocolate
1/3 cup chopped pistachios
1/3 cup chopped almonds

Instructions

Cut the dates down the center lengthwise and remove the pit.
Fill each date with 1 teaspoon of peanut butter.
Melt the dark chocolate and spread the nuts out in a single layer on a cutting board.
Dip half of each date in the melted chocolate and then roll in either the pistachios or the almonds.
Place dates on a piece of parchment or wax paper.
Refrigerate for 20 minutes before serving.
