I knew when I got to try @uniquemuscleofficial Vanilla Coconut Lean Up All In One Protein, I had to make something fun. Samoa cookies are a girl scout cookie that include a shortbread base, and a crunchy caramel with coconut and chocolate drizzle.

Here’s what I came up with! They taste so good, and are full of good ingredients for you. And just over 8g of protein in each 😋

SHORTBREAD BASE 

3/4 cup almond flour 

2 tablespoons agave/maple syrup 

2 tablespoons coconut oil

2 heaped scoops of @uniquemuscleofficial vegan Vanilla Coconut Lean Up Protein (50g protein)

Mix all ingredients together until you get a sticky base. Add more almond flour if it is too wet! Press into a silicon donut pan or a tray if you want to make a slice. Freeze. 

CRUNCHY CARAMEL TOP

5 medjool dates, mashed 

1/4 cup of peanut butter 

4 tablespoons of agave/maple syrup

1/4 cup of coconut oil

2 crushed Weetbix 

1/4 cup of Rice Bubbles

1/4 cup of oats 

1/4 cup of dedicated coconut 

1/4 cup of diced dried apricot

Mash the dates in a bowl then add the PB, liquid sweetener and coconut oil and mix well until you get a caramel! Then add all your crunchy, delicious toppings until you get a thick but evenly combined topping. press this into your donut moulds or the tray and freeze for 1-2 hours.

Melt your vegan chocolate and dip the bottom half of the donuts. Alternatively, drizzle and douse them in chocolatey goodness. These are so good kept in the fridge or freezer and are the perfect healthy dessert!!
