How good would be having good old banana bread for breakfast in less than 20 minutes? This slice is a perfect on-the-go breakfast alternative or when you are in a rush! It takes only 5 minutes to mix all ingredients together and 10 to 15 minutes to bake. It is made from wholegrain, naturally sweetened, and packed with protein and healthy fats. Bake a couple of loaves and pop them in the freezer. We recommend you to defrost the night before so that they can be easily reheated in the morning - either oven or microwave. And that’s it! 


'NANA BREAD BREKKIE BARS
(Makes one mini loaf)

INGREDIENTS:
1/4 cup buckwheat flour 
2 tbsp Lean Up Vanilla & Coconut Protein
1/2 tsp baking powder
1/4 tso salt
1 tbsp ground cinnamon 
1 tsp melted coconut oil 
1/4 cup mashed banana (one small or half medium banana) 
Stir in: handfuls of chopped walnuts, sprinkle of dried fruits (such as soft dried blackcurrants)
Optional: 1 tsp Sweetener of choice
Garnish: Chopped nuts, more cinnamon and sprinkle of coconut sugar

 

INSTRUCTIONS:
Preheat the oven to 175C. Mix everything together in a bowl and pour batter into a lined or sprayed mini loaf pan. Smooth top of batter and top with chopped nuts or muesli and a sprinkle of sugar. Bake for 10 to 14 minutes or until a toothpick inserted into the center comes out clean.
